A festive and delicious fruit pizza perfect for summer celebrations featuring a cookie-like crust, creamy filling, and fresh fruits.

  • 1 1/2 cups (188 grams) all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3/4 cup (150 grams) granulated sugar
  • 2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon extract
  • 1 large egg (50 grams, out of shell, room temp)
  • 8 oz (225 grams) cream cheese, room temp
  • 1 1/3 cups (160 grams) powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup (80 ml) heavy cream, cold
  • 1 pound (453 grams) strawberries
  • 6 oz (170 grams) blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the lemon zest, lemon extract, and egg to the butter mixture. Mix well.
  5. Gradually add the dry flour mixture to the wet ingredients until combined.
  6. Spread the dough onto a baking sheet lined with parchment paper, flattening it into a round shape about 1/4 inch thick.
  7. Bake for 12-15 minutes or until lightly golden. Let it cool completely.
  8. In a large bowl, beat the cream cheese until smooth.
  9. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Mix until well combined.
  10. In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  11. Spread the cream cheese topping over the cooled crust.
  12. Arrange the strawberries and blueberries on top in a festive pattern.

Notes

Allow the crust to cool completely before adding the cream cheese topping. Choose seasonal fresh fruits for best flavor.
