This asparagus potato salad combines tender potatoes with crisp asparagus and a light creamy dressing for a fresh, balanced, and easy-to-make side dish.

Ingredients

1 1/2 pounds potatoes (baby or Yukon gold, halved)

1 bunch asparagus, trimmed and cut into 2-inch pieces

1/2 cup plain yogurt or light mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

2 tablespoons olive oil

2 tablespoons fresh herbs (parsley or dill)

Salt, to taste

Black pepper, to taste

Optional: green onions

Optional: lemon zest

Instructions

1. Wash and cut potatoes evenly.

2. Place potatoes in salted water and bring to a boil.

3. Cook for 10 to 12 minutes until fork-tender, then drain and cool slightly.

4. Bring a pot of water to a boil and blanch asparagus for 2 to 3 minutes.

5. Transfer asparagus to cold water, then drain well.

6. In a bowl, mix yogurt or mayonnaise, Dijon mustard, lemon juice, olive oil, salt, and pepper.

7. Add potatoes and asparagus to a large bowl.

8. Pour dressing over and toss gently to combine.

9. Fold in fresh herbs and optional green onions.

10. Serve chilled or slightly warm.

Notes

Do not overcook potatoes to maintain structure.

Cool ingredients slightly before mixing to avoid breaking them.

Blanch asparagus briefly to keep color and texture.

Mix gently to prevent a mashed texture.

Chill before serving for best flavor.
