This asparagus risotto delivers a creamy texture with fresh asparagus, Parmesan, and a light, balanced finish. The method builds flavor step by step while keeping the rice smooth and the asparagus crisp-tender.

Ingredients

Scale

1 1/2 cups Arborio rice

1 bunch asparagus, trimmed and cut into 1-inch pieces

4 cups vegetable broth, kept warm

1 small shallot, finely diced

2 cloves garlic, minced

3 tablespoons olive oil

1/2 cup grated Parmesan cheese

1 tablespoon butter

1 teaspoon lemon zest (optional)

Salt, to taste

Black pepper, to taste

Optional: fresh parsley or basil

Optional: cooked shrimp or chicken

Instructions

1. Warm the broth in a saucepan and keep it at a low simmer.

2. Heat olive oil in a wide pan over medium heat.

3. Add diced shallot and cook until soft and translucent.

4. Stir in garlic and cook briefly until fragrant.

5. Add Arborio rice and stir for 1 to 2 minutes until lightly toasted.

6. Pour in one ladle of warm broth and stir until mostly absorbed.

7. Continue adding broth one ladle at a time, stirring regularly.

8. After about 10 minutes, add asparagus pieces to the rice.

9. Keep adding broth and stirring until the rice is tender with a slight bite.

10. Remove from heat and stir in butter and Parmesan cheese.

11. Add lemon zest if using and season with salt and black pepper.

12. Serve immediately while creamy and smooth.

Notes

Keep broth warm to maintain steady cooking temperature.

Stir regularly to develop a smooth and creamy texture.

Add asparagus midway to keep it tender but not soft.

The risotto should be slightly loose, not thick or dry.

Serve immediately for the best texture and consistency.
