This blistered asparagus recipe uses high heat to create charred, crisp edges while keeping the centers tender. Finished with garlic and lemon, it’s a quick and flavorful side dish.

Ingredients

1 bunch asparagus, trimmed

2 tablespoons olive oil

2 cloves garlic, sliced or smashed

1 tablespoon lemon juice

Salt, to taste

Black pepper, to taste

Optional: grated Parmesan cheese

Optional: red pepper flakes

Instructions

1. Trim asparagus and pat completely dry.

2. Heat a heavy skillet over medium-high to high heat until very hot.

3. Add olive oil to the pan.

4. Place asparagus in a single layer.

5. Let cook undisturbed for 1 to 2 minutes to blister.

6. Turn and continue cooking for another 3 to 5 minutes, allowing char spots to form.

7. Add garlic during the last 1 to 2 minutes of cooking.

8. Remove from heat and drizzle with lemon juice.

9. Season with salt and black pepper.

10. Add Parmesan or red pepper flakes if desired.

11. Serve immediately.

Notes

Make sure asparagus is dry to achieve proper blistering.

Use high heat for best char and texture.

Do not overcrowd the pan to avoid steaming.

Add garlic near the end to prevent burning.
