Easy Asian Cucumber Salad

A refreshing and crunchy salad that’s perfect for hot days or as a side dish.

Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic (minced, optional)

Instructions

  1. Rinse and slice one end of the cucumber at an angle. Continue slicing at an angle to create oval slices.
  2. Add the sliced cucumbers to a bowl and sprinkle with salt. Mix and refrigerate for at least 20 minutes.
  3. Drain the water from the cucumbers and rinse briefly before returning them to the bowl.
  4. Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic. Stir to combine.
  5. Serve and enjoy your refreshing salad!

Notes

Adjust sugar to taste; use 1 tbsp for a sweeter salad. For more spice, add extra chili oil. Try to slice cucumbers uniformly for even soaking.
