Delicious and refreshing herby lemon skewers with tender marinated chicken, perfect for grilling or stovetop cooking.

Ingredients

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 23 garlic cloves (crushed)
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large chicken breasts (skinless, boneless)
  • Wooden skewers (soaked in boiling water for 30 minutes)

Instructions

  1. Combine all the ingredients for the marinade in a bowl.
  2. Slice the chicken into bite-sized chunks and place them in the bowl.
  3. Pour the marinade over the chicken, cover, and let it marinate for at least 30 minutes or up to 24 hours in the fridge.
  4. Thread the marinated chicken onto soaked wooden skewers or metal skewers.
  5. Heat an outdoor grill or stovetop grill pan and cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
  6. Remove from the heat and let the skewers rest for 5 minutes before serving.

Notes

Soaking the wooden skewers is essential to prevent them from burning on the grill. Feel free to add vegetables like bell peppers, onions, or zucchini between the chicken pieces for added flavor and nutrition.
