  • 1 box (12 oz) tricolor rotini pasta
  • 1 cup chopped cucumber (peeled and seeded, about 1 cucumber)
  • 1 cup halved cherry or grape tomatoes
  • 1 cup crumbled feta cheese
  • 1 can (2.25 oz) sliced black olives (drained)
  • 1/4 cup finely diced red onion
  • 1/21 cup Italian salad dressing

Instructions

  1. Start by cooking the pasta according to the package instructions, adding 1-2 teaspoons of salt to the water.
  2. Once the pasta is cooked, drain it and rinse it under cold water to cool.
  3. In a large mixing bowl, combine the cooled pasta with chopped cucumber, halved tomatoes, feta cheese, black olives, and diced red onion.
  4. Pour the Italian dressing over the salad and stir gently to combine. Adjust the amount based on your taste.
  5. Refrigerate the salad for 2-4 hours for the best flavor melding.
