A crisp salad with a bright, emulsified lemon vinaigrette made from fresh lemon juice, garlic, and Dijon mustard. The dressing clings beautifully to greens, offering a balanced citrusy tang and smooth texture.

Ingredients

1 cup fresh lemon juice
1 small garlic clove, grated
1 teaspoon Dijon mustard
¼ teaspoon sea salt
Freshly ground black pepper, to taste
½ teaspoon honey or maple syrup (optional)
¼ to cup extra-virgin olive oil
½ teaspoon fresh or dried thyme (optional)

Instructions

Pour the fresh lemon juice into a small mixing bowl.
Grate the garlic clove directly into the lemon juice.
Add Dijon mustard, sea salt, and several grinds of black pepper.
Whisk the ingredients together vigorously until fully combined.
While whisking continuously, slowly drizzle in the olive oil until the dressing is smooth and emulsified.
Taste and adjust seasoning if needed.
Toss the dressing with chopped fresh greens or use as a base for your favorite salad greens.

Notes

Use freshly squeezed lemon juice for brightest flavor. Substitute garlic powder for milder taste. Yellow mustard can replace Dijon. Avocado oil works as a neutral alternative. Omit honey for a sugar-free version. Thyme can be replaced with oregano or basil.
