1 tablespoon olive oil

4 cups fresh spinach

1 small onion, finely diced

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1 1/2 cups shredded cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Instructions

1. Preheat the oven to 375 degrees Fahrenheit.

2. Fit the pie crust into a 9-inch pie dish.

3. Crimp the edges and refrigerate the crust while preparing the filling.

4. Heat olive oil in a skillet over medium heat.

5. Add diced onion and cook until softened.

6. Add spinach and cook until wilted.

7. Remove excess moisture from the skillet.

8. Whisk eggs, milk, heavy cream, salt, black pepper, and garlic powder in a large bowl.

9. Spread the spinach and onion mixture evenly into the crust.

10. Sprinkle shredded cheese over the vegetables.

11. Pour the egg mixture carefully into the crust.

12. Bake for 40 to 45 minutes until the center is lightly set.

13. Allow the quiche to rest for at least 15 minutes before slicing.
