A fresh and vibrant salad featuring sweet corn, crisp apples, creamy avocado, and juicy tomatoes, dressed with a delightful Honey-Dijon Vinaigrette.

Ingredients

  • 2 cups sweet corn kernels (~3 ears)
  • 1 cup cherry or grape tomatoes (halved or quartered if large)
  • 3 small or 2 large green onions (chopped)
  • 1 small avocado (chopped)
  • 1 red apple (chopped)
  • 1/3 cup sliced or chopped almonds
  • 1/4 cup packed fresh basil (chopped)
  • 1/2 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 Tablespoon honey
  • 1 Tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Make the Honey-Dijon Vinaigrette by combining olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper in a jar or bowl. Shake or whisk until blended. Taste and adjust sweetness with more honey if desired.
  2. Combine the sweet corn kernels, halved cherry tomatoes, chopped green onions, diced avocado, chopped red apple, sliced almonds, and fresh basil in a large bowl.
  3. Drizzle the Honey-Dijon Vinaigrette over the salad and stir gently to combine.
  4. Serve immediately for the best flavor, or refrigerate for a few hours if needed. Best enjoyed shortly after making.

Notes

Fresh corn is recommended for optimal flavor. Add avocado just before serving to prevent browning.
