1 pound ground beef (80/20)

Salt to taste

Black pepper to taste

4 burger buns

4 slices cheddar cheese

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon mustard

1 tablespoon finely chopped pickles

1 teaspoon pickle juice

1/2 teaspoon garlic powder

Thinly sliced onion

Pickles for topping

Shredded lettuce

Instructions

1. Preheat a cast iron skillet or griddle over medium-high heat.

2. Divide ground beef into 4 loosely packed balls.

3. Place one beef ball onto the hot surface.

4. Press it flat immediately using a spatula or burger press.

5. Hold pressure for about 10 seconds to create a strong crust.

6. Season with salt and black pepper.

7. Cook the first side for about 2 minutes without moving.

8. Flip the patty and add a slice of cheese.

9. Cook for another 1 to 2 minutes until done.

10. Toast burger buns lightly on the same surface.

11. In a bowl, mix mayonnaise, ketchup, mustard, pickles, pickle juice, and garlic powder.

12. Spread sauce on both sides of the buns.

13. Assemble burgers with patties, onions, pickles, and lettuce.

14. Serve immediately while hot.

Notes

Do not overwork the beef when forming balls.
