A vibrant, restaurant-style salad with a tangy balsamic dressing, creamy goat cheese, and crunchy seeds. Fresh, balanced, and easy to assemble in just 15 minutes.

Ingredients

Spring mix, 1 package (5 oz)
Cherry tomatoes, 1 cup
Cucumber, medium, 1
Radishes, small, 2-3
Red onion, 1/2
Sunflower seeds, 1/2 cup
Crumbled goat cheese, 1/2 cup
Extra virgin olive oil, 1/4 cup
Balsamic vinegar, 3 tablespoons
Fresh lemon juice, 2 tablespoons
Garlic clove, 1

Instructions

Wash and dry spring mix; place in a large bowl.
Halve cherry tomatoes and add to the bowl.
Slice cucumber and radishes; thinly slice red onion.
To a small cup, add olive oil, balsamic vinegar, lemon juice, and minced garlic; whisk to emulsify.
Toss dressing with salad greens and vegetables.
Sprinkle sunflower seeds and crumbled goat cheese on top. Serve immediately.

Notes

Use baby spinach or arugula as spring mix alternatives.
Substitute feta cheese or shaved Parmesan for goat cheese.
English cucumber recommended for fewer seeds.
Toast sunflower seeds in a dry skillet for extra flavor.
