A refreshing watermelon salad drizzled with balsamic syrup, perfect for summer gatherings.

Ingredients

  • 2/3 cup balsamic vinegar
  • 1 Tablespoon sugar
  • 1 (7-to 8-pound) watermelon, cubed
  • 2 Tablespoons fresh lime juice
  • 2 Tablespoons olive oil
  • 1/4 cup fresh mint leaves, chopped
  • 2/3 cup crumbled feta cheese

Instructions

  1. Combine balsamic vinegar and sugar in a small saucepan over medium-high heat. Bring to a boil and cook until reduced to a syrupy consistency, about 5 minutes. Set aside to cool.
  2. Cut the watermelon into cubes or scoop into balls and place in a large bowl.
  3. Whisk together lime juice and olive oil with salt and pepper in a small bowl. Pour over the watermelon, add mint and feta, and toss to combine.
  4. Drizzle the salad with balsamic syrup and serve immediately.

Notes

For the best flavor, chill the watermelon before preparing the salad. Keep dressing separate if storing leftovers.
